ARTISANAL DISTILLATION USING THE DISCONTINUOUS METHOD
Discontinuous distillation is that processing which is done 'in crush', i.e. feeding the distillation plant non-continuously.
For each of these "crushes" the Master distiller will start heating the system to bring the raw material to the boil, alcoholic vapours will form and the recondensed vapour will come out as a liquid.
At this point it will be the Master distiller who, based on some parameters of observation of the system and thanks to his senses, will discard the first part called HEAD, containing the methyl alcohol, he will take the second part called HEART, the part where the aromas and the ethyl alcohol must remain and will discard the third part called TUNE, composed of high-boiling, fatty and bitter substances.
